Teres Major Steak has a great flavor and texture. This is a more affordable alternative to the filet mignon. These are tenderloin cuts from the shoulder or chuck area of the cow. The "Teres Major" is Latin for "round". The cut fomes from the muscle in the round section of the cow right below the hip bone. This cut is also known as "bistro tender" or "shoulder tender".
